Today I wanted to share some quick and easy breakfasts that teens can make while trying to run out the door to the bus stop. Here are a couple of ideas. Each recipe makes 1 serving.

  • Pancakes - make your favorite pancake recipe and freeze. Then, pop it in the microwave for 30 seconds until thawed. Ta-da! (you can also do this with French toast or waffles.)
  • Make a fruit compote- chop your favorite fruit and place in saucepan. Add a tablespoon of sugar(optional) and some lemon juice. Turn the heat on to medium. Stir until fruit is tender and juices are flowing. Serve over yogurt and/or your favorite pancake/ waffle.
  • Try a smoothie. Blend 1/2 cup of your favorite fruits (frozen or fresh) with 1/4 cup yogurt and 1/4 cup milk. Add 1/8 teaspoon vanilla extract and stir.
  • Eat an avocado. I know it sounds weird, but its so delicious! Halve an avocado and slice without taking the flesh out of the peel. Sprinkle on some cinnamon sugar or maybe some maple syrup or honey and you're done! This tastes really good because its almost like a custard; smooth, creamy and sweet!
  • Make an omelet. Whisk one egg and some salt and pepper in a bowl. Pour in oiled pan over medium-low heat. Sprinkle with whatever seasoning you want (herbs, spices etc.) and cover. Cook for about 2 minutes or until egg is firm. Flip and cook another 30 seconds. Slide onto plate and serve.
